Porridge wie Apfelkuchen / Apple Pie Oatmeal

Im Oktober überkommt mich meist die Lust auf allerlei Gemütlichkeit. Auch beim Essen. Und im Moment ist ein warmer Apfelkuchen mit Zimt und Muskat die personifizierte Gemütlichkeit für mich...Ein Klecks Sahne dazu, der neben dem heißen Kuchen etwas zerfließt und in welchen man genüsslich jedes Gäbelchen voll Kuchen tunken kann.
Damit schon beim Frühstück ein kleines bisschen Wärme in uns aufsteigt, hier ein Rezept für Apfelkuchen-Porridge. Lasst euch nicht von Äußerlichkeiten abschrecken, der Duft nach Äpfeln und Zimt am frühen Morgen lässt euch alle Vorurteile vergessen. Versprochen!
Da dieses Frühstück schon etwas aufwendiger ist, als eine Schale Müsli oder ein Nutellabrot, empfehle ich  das Kompott am Vortag/-abend zu kochen. Dann müsst ihr morgens nur noch das Pooridge zubereiten und das geht dann ruckizucki:)!

 Zutaten für 2-3 Portionen Porridge:

1 cup kernige Haferflocken (oder 250ml Glas/Messbecher mit Haferflocken füllen)
1 cup (250ml) Wasser
1 cup (250ml) Milch
2 El geschrotete Leinsamen
1 El Kokosraspeln
1/2 Tl Zimt
1 cup Apfelkompott (Rezept siehe unten)

Haferflocken mit Wasser, Milch, Leinsamen und Kokosraspeln in einem Topf zum Kochen bringen und unter ständigem Rühren 5-10 Minuten köcheln lassen, bis ein geschmeidiger Brei entsteht. Dann das Zimt und Apfelkompott unterrühren.

Apfelkuchen-Kompott:

500g Äpfel (z.B Elstar), geschält und in grobe Stücke geschnitten
1 El Zitronensaft
1 El Agavendicksaft
1 Tl Vanillezucker
1 1/2 Tl Zimt
Prise Muskat
1/4 cup Rosinen, ungeschwefelt

Apfelstücke mit Zitronensaft mischen und in einen Topf geben.
Restliche Zutaten hinzu geben und zum Kochen bringen.
10-15 köcheln lassen, bis die Äpfel weich sind.

Mit gerösteten Mandeln und restlichem Apfelkompott servieren.

In Germany we normally don't have "oatmeal".Like, at all. I do not know one single person that eats a cooked breakfast (besides bacon and eggs). In Germany we have "Müsli" and cereal, toast, sweet and savory "Brötchen" (rolls)...
But I love my oatmeal. It is the only breakfast I have tried that keeps me full for hours, does not disturb my tummy and tastes delicious. The variaties are endless so my everyday oatmeal isn't boring at all.
Today I tried something new (to me): Apple-pie oatmeal.
The Apple-pie compote is inspired by a Canadian friend, who added nutmeg to his apple sauce, and now I cannot go back. It is TASTY!

Ingredients:
(Serves 2-3)


1 cup rolled oats
1 cup (250ml) water
1 cup (250ml) oat milk
2 Tbsp ground flax seeds
1 Tbsp shredded coconut
1/2 tsp cinnamon
1 cup Apfelkompott aka apple compote (recipe below)

In a small pot bring oats, flax, water, milk and shredded coconut to a boil. Reduce heat and let it bubble for 5-10 minutes. Stir frequently!
The oats should have a nice and creamy consistency by the end. If your oats seem to dry add more milk. Don't forget the stirring.
Add cinnamon and apple compote. Serve with toasted nuts and a drizzle of maple syrup.

Apfelkuchen-Kompott/ apple-pie compote:

500g apples of choice (I used Elstar), peeld and cut into pieces
1 Tbsp lemon juice
1 Tbsp Agave
1 tsp vanilla extract
1 1/2 tsp cinnamon
pinch of nutmeg
1/4 cup raisins

Place apple cubes and lemon juice into a pot and stir to coat. Add remaining ingredience and bring to a boil. Cook for about 10-15 minutes until apples have softened.
